Hotel LaTour appoints new Head Chef!
Too many cooks? Not when you’re working alongside brothers Marcus and Brian Wareing.
Michelin-starred Chef Marcus had familiar company in the kitchen at Aalto Restaurant, Birmingham, when he joined forces with brother Brian for a training session.
Marcus has overseen menus, training and service standards at the brasserie-style restaurant at Hotel La Tour, since its opening a year ago. Brian is in the kitchen on a daily basis as an onsite monitor overseeing operations for Marcus.
Last week Aalto’s Dan Pearce – announced as the restaurant’s new Head Chef – and his team had the benefit of the culinary expertise of the two Wareings as they oversaw and tasted new dishes for the spring.
In an interview to mark the hotel and restaurant’s first birthday this week, Marcus said: “The single most important factor when people choose a restaurant is their expectation. They choose somewhere to dine based on their expectations. It’s then up to us to meet and exceed these in all areas – food, beverage, service and hospitality.”
Celebrating his appointment Dan, previously Sous Chef and who has been at Aalto since opening, said: “It’s always a pleasure to work with Marcus and Brian, their enthusiasm and attention to detail are infectious. It’s a privilege to have them in our kitchen.” Pastry Chef Rachel Dorrell received a prestigious seal of approval with Marcus declaring her new-look High Tea menu her “best ever ” – so fans of afternoon tea are certainly in for a treat!
Aalto serves British classic dishes with a modern twist and will continue to work with Marcus and Brian as it enters its second year of welcoming diners to the brasserie-style restaurant in Albert Street.
